Pasture-Raised Eggs
Our Pasture-Raised eggs are produced by laying hens that are raised out on fresh grass for as much of the year as possible. This allows the chickens to enjoy fresh grasses, seeds, and bugs as a part of their diet, thus improving the egg's nutritional value and flavor and improving their color and texture. During the winter months while grasses are dormant laying hens are moved into the protection of a hoop house where they enjoy deep mulch bedding. This deep mulch bedding provides passive warmth and probiotic health effects as it decomposes in the bottom layers. While in the hoop house our chickens scratch for hand spread seeds and sprouting grains. They are also fed fresh grasses grown as microgreens on our farm as well as homegrown mealworms. This winter process mimics the high-quality conditions that our laying hens experience on pasture and maintains the quality of our pasture-raised eggs .
Microgreens are the young form of edible plants, often harvested at 7-10 days. These plants have superior nutrition providing up to 40 times the antioxidants and 5-9 times the vitamins per serving compared to their mature counterparts. Microgreens have proven health benefits including cancer-fighting properties, aiding in healthy digestion, weight management, blood pressure, and immune system support.
Microgreens are famous for adding tons of flavor, texture, and color to virtually any meal. Greens such as mustard, radish, and leek add powerful zesty flavor to dishes while mild greens such as broccoli, cabbage, and sunflower quickly and easily replace any type of lettuce with added texture, flavor and nutrition!
